Hello and howdy. Hope you’re HUNGARY because I’m about to post some food. Get it?

First ding dang thing to do was mix up some lángos dough. Lángos are the little fried bread treats that just taught me how to do áçcéñt märkš on my ïPhøńē. They’re little fried dough cakes topped with cheese, sour cream, garlic, or, ya know, whatever.

Unlike the fried bread treats I just made in Venezuela (arepas), these are made from all-purp wheat flour instead of cornmeal. In fact, the recipe is pretty much exactly the same thing I eyeball for pizza dough. So, like, fried pizza after you put cheese on these suckers.

Apparently according to a Hungarian guy I know, these sometimes have potato in the dough. Sorry GARY. That’s not what the only link I looked at on the internet told me!

While I was waiting to fry those up, I got started on the fözalék, which is like masters-level iPhone accent mark training. It’s got two little dots over the o! It’s creamed Hungarian vegetables. The linked recipe is like “usually there’s actual cream, and you thicken it with flour, but in this one we’re gonna substitute that with potatoes?” Sorry GARY.

Basically you burl yerself some veggies in milk and veg broth, and then you thicken it (in this case, the potatoes thicken it, ok? don’t call the police).

The recipe calls for kohlrabi, which is a made up vegetable, but google tells me that broccoli cuts are a reasonable replacement.

After the veggies were creamed, I fried up the lángos. Took me a while to find the sweet spot in both temperature and cook time, but once I did these were really good. Crispy around the edges, soft in the middle, cheese melty on top.

Pretty good. I doubled the recipe and ended up eating nothing but fözalék for a week. Wine pairing: Diet Mt Dew.

The dessert was interesting! And time consuming! The dobos torte is like eight individually baked thin layers of heavy lemon zest and vanilla flavored egg-based cake batter, layered with chocolate buttercream, and topped with a crunchy caramel disc. Lemon, vanilla, chocolate, and caramel, man. Or as Rachel said, “this has one too many flavors.” Didn’t stop us from eating an entire giant cake.

Listen. It ain’t pretty, but there’s a good explanation: I didn’t care enough to try.

I did want to make sure I had my Ts crossed and my Ös dotted, but apparently I misread or screwed this one up a little – because I put a layer of icing on top of the caramel crunchy deal. Ööps.

Our first culinary visit into the heart of Africa, or at least off the coast of Africa where David Schwimmer plays a hypochondriac giraffe.

I don’t do any research for these things, but Rachel does, and apparently Madagascar cuisine is slurped up from both the Indian and French cultures. The end result is a soup that wouldn’t surprise me on an Indian menu, a rice dish I’ve absolutely ordered from our local kebab place, and a French-ish dessert.

Malagasy lasopy is a puréed vegetable soup. You basically take a bunch of vegetables, boil em in broth, and whiz the whole thing together in a food processor. The recipe calls for water and an animal bone instead of broth, but fuuuuuuuuuuuuuu. You can probably do this with literally any vegetables, I stuck to the recipe.

Even with no seasoning/spices besides salt and pepper, the soup is a pretty good hit and gets good flavor from the turnip and green onions.

The biryani is a warm spiced rice dish. I substituted vegetable bouillon for the chicken bouillon, and I couldn’t find ginger garlic paste so I made my own. You’ll be horrified to know that my grocery cart at one point had both a jar of pickled ginger and a jar of “garlic paste” which apparently also had, like, parmesan cheese in it? Then I decided to avoid a complete Ugly Food meltdown and actually google the recipe for ginger garlic paste in-store and picked up a ginger root and effing did it. I ended up accidentally making like a cup of ginger garlic paste (only needed a tablespoon) so I ended up using it for a stir fry the next day.

Anyway, pretty good. It tasted about the same as restaurant biryani, although it made a lot more (and cost a lot more – not sure if it evened out price wise). Suggested wine pairing: Diet Mt. Dew.

The clafoutis dessert is kind of, I dunno, a flat custardy cake? At least mine was. I think the pan I used was too big. The recipe just said “tart pan,” man! Be clear in your recipes!

Anyway, it still tasted good as hell.

The CULINARY ADVENTURE took us to Europe. Albania. I don’t know where in Europe it is, shut up.

The first thing I made was byrek, which I guess can be made in a lot of different varieties, but this one is cheddar and spinach. A bunch of that type stuff in phyllo dough.

From previous recipes I’ve done, I learned that puff pastry and phyllo are super insanely hard to make, and homemade isn’t any better than store bought, so don’t waste the time. Thanks Dorie!

It was real easy, and I’m definitely gonna make it again with the other half of my phrozen fyllo dough.

The turli perimesh is Albanian mixed vegetables. I used green pepper, potato, zucchini, and eggplant. It cooked down to stewlike consistency and I’m tempted to think that I may have overcooked it. Regardless, this meal receives my highest rating: GOOD AS HELL. Suggested wine pairing: Diet Mt. Dew.

The walnut cake was really good, too. Basically a simple cake batter with toasted walnuts mixed in, and then soaked in a lemon sugar glaze and baked again for ten minutes. Nice and moist. Reminded me a lot of a zucchini bread or something similar, even though the only fruit was lemon juice in the glaze.

Albania, u have earned ur place on earth’s map. Bless.

The next country we picked was very challenging from a vegetarian standpoint. See u then, buttz.

Mike Spoodles’ Old-Timey Hobo Vegetable Soup

For the past three weeks, I’ve been actually cooking. Homemade vegetable soup, sir. Sure, it’s a meal that requires absolutely no maintenance, but it is fresher than anything you’re going to nuke up in the microwave. In a world drowning in preservatives and sassafrass (the ‘frass is not to be confused with sassafras, which is a fresh oil used to make root beer and ecstasy), you can never have enough fresh, unrefined produce.

My favorite part about my Old-Timey Hobo Vegetable Soup is that it is literally made of whatever you have laying around, assuming that whatever-you-have-laying-around is not your kid brother.

THE BROTH

Hobo Soup at workStewed tomatoes (canned–no salt added). This was a recommendation that initially turned me on to this “recipe” of sorts. You dump a can of stewed tomatoes (113 calories total) into a pot and add two- to four cans-full of water, making a nice, red, tomatoey broth. Any canned tomato will do, really. I accidentally bought diced tomatoes and they seemed to work fine (just fine). Watch out–most canned vegetables are doped up on sodium. Do yourself and your heart a favor. Go low-sodium and season your soup to taste later.

V8 Juice (low sodium, natch). If you’re looking for something with a bit more of a bouquet, V8 100% Vegetable Juice will work in a pinch. The reddish gunk is a mixture of tomatoes, carrots, celery, beets, parsley, lettuce, watercress, and spinach (AND IT TASTES AS GOOD AS IT SOUNDS). As a juice it is probably the most horrid thing known to man. As a broth? Well, it’ll do. Water it down to taste and plunk in your miscellaneous fillings. Tomato juice will also work, although at that point shouldn’t you get the actual tomato goodness of a can of stewed tomatoes?

Vegetable broth. Somehow there is an option even lazier than the previous two options. Available in convenient off-the-shelf can form, vegetable broth is the boiled-down essence of any number of stinky vegetables. You’ll probably fare better, though, making your own vegetable broth if you have the time.

OTHER BROTH ALTERNATIVES: Of course you could make the broth out of just about anything. You could use plain old water and spice it up. If you’re a meat-eater, you could obviously go for the old standby chicken broth.

AND NOW TO THE VEGETABLES

Once again, the sky is the limit here. Whatever you have that is fresh and lingering around your kitchen can go into this pot. As a for-instance, here are the things that went into my soup tonight:

  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper (my peppers were shriveling)
  • 100g fresh onion
  • 10g garlic
  • 2 beets
  • 3 spears asparagus
  • 30g baby portabello mushrooms
  • 10 radishes

Beets have been a must-have in my soups for the past week. Not only do they add a subtle hint of sweetness (which is sorely lacking in most vegetables), but they will turn your soup blood red. For a less-messy option, you can chop up an apple to offset the veggies with sweetness.

Other favorites of mine include: zucchini, cabbage, carrots, celery, eggplant. You can boil an egg (or an egg white) in the broth as well.

Experiment gone horribly wrong: fresh jalapeo peppers, which are apparently as unappetizing in soup as they are in bulk eating contests.

PREPARATION

After all of the ingredients are tossed into a pot willy-nilly, bring the concoction to a boil. Once your soup has been boiling for several minutes, reduce the heat and cover your pot. Leave covered until you are ready to serve. Everything will get tender. Your veggies and broth will begin to influence each other with their flavors.

This soup can serve one or many. The nutritional value of an entire batch is generally less than 400 calories. With that said, it’s a very filling dish. If you attempt to eat the whole thing in one sitting, your stomach will probably rupture.

I’d strongly recommend this soup if you are looking for a filling, low-calorie, fat-free meal, or just a way to experiment with new and different vegetables. The only thing missing is the stone.

On Culinary Arts…
Q. What is your salad dressing of choice?
A. Nothing. If I want to eat veggies, I’d like to taste the veggies. In a pinch (such as particularly rancid lettuce), a quick squirt of white-trash yellow mustard is the cure for what ails you.

Q. What is your favorite fast food restaurant?
A. Back when I ate meat, the answer would unequivocally be Wendy’s. Their beef tastes like actual meat, which is in turn enhanced by the condiments. McDonald’s is too much like a condiment sandwich, and Burger King’s Whomperoo tastes like a bottle of liquid smoke. Nowadays, I am a connoisseur of Taco Bell, which surprisingly offers a fairly healthy option that tastes good–Pintos n’ Cheese.

Q. What is your favorite sit-down restaurant?
A. Red Robin offers a Gardenburger (which criminally costs $7.99, the approximate cost of 2.5 boxes of the same damn thing). More importantly, they offer a fairly comprehensive burger customizer which offers nutritional information based on your selection from a wide variety of rolls, condiments, cheeses, and sides.

Q. On average how much of a tip do you leave at a restaurant?
A. 20% is my bare minimum. I’ve been known to tip 100% for exceptional service and 50% for more-than-adequate. I also have a special form of white-guilt that springs from ordering nothing but coffee. In turn, I will generally pay the price of an average meal for a cuppa.

Q. What food could you eat every day for two weeks and not get sick of?
A. This is a bit of a loaded question because I ate the same food every day for nearly three years. If I had to choose my absolute favorite from those days, it would probably be the vegan Boca Burger. You can eat it plain and bland (a personal favorite). Crumble it into any random, lazy-ass recipe. Use it as a vessel for sauerkraut or delicious, delicious mustard.

Q. What are your pizza toppings of choice?
A. I don’t need clutter in my life. Plain ol’ cheese. Doesn’t matter whether it’s a classic Margherita or a big, floppy, greasy triangle of dough, sauce, and cheese from a local pizzeria. The old adage remains true; keep it simple, slutface.

Q. What do you like to put on your toast?
A. Bread is a nonentity in my life.

On Technology…

Q. What is your wallpaper on your computer?
A. Marshmallow Peeps lollipop.

Q. How many televisions are in your house?
A. Embarrassingly enough, at least seven.

A. LG

A. I had a fairly serious bicycle accident almost two years ago. Without the helmet, I would have most assuredly been kaput. Otherwise, I just cracked my head open but-good and concussed myself in the process.

Welp.

For two-and-a-half years, I ate the same thing every day: Kashi GoLean, Wheaties, apples, Lite & Fit yogurt, Boca vegan burgers, broccoli, and protein shakes. I lost 120 pounds. I was maintaining with 1800 calories at about 180 pounds.

Two weeks ago, I added variety into my diet. I’ve upped my calories to 2000. I’ve actually managed to drop to 175 pounds since then, which is confusing and strange but not entirely unwelcome, I suppose. As long as people don’t tell me I look like a holocaust survivor or a cancer patient (again), I’ll be a-okay.

This journal entry isn’t about that anyway. It is about food! Glorious food!

It seems to me like I’m falling into the same ol’ obsessive-compulsive habits. I’ve introduced variety, but now I’m using the same staples every day. Rehydrated pinto beans. Fat-free cottage cheese. Egg whites. Frozen veggies. In fact, it seems like the only real variety I get is in my indulgence of the day–a serving of candy. Today it is green Marshmallow Peeps bunnies. Yesterday was 70% dark chocolate w/ raspberries from Endangered Species.

One of my biggest problems is laziness. There’s gotta be a calorie label on it. And why mix ingredients together into so-called “recipes?” I don’t want to have to figure out the calorie information for recipes. That’s silly. So I’ll eat my beans microwaved with some hot sauce. And my veggies will go unseasoned. Vive le freak!

That was more of a ramble than anything. I’m sure as I get back into writing, I will retain some of that “linear structure” that I learned so much about as an English major in college.

In conclusion, eating is a thing of great contrast. I hope you enjoyed my essay as much as I enjoyed stopping it.
