Tuesdays With Dorie – Mixed Berry Cobbler and Cream Puffs – Take 2

As you may remember, I had a bit of a disaster last week with the cream puff ring. Obviously I needed to rectify this, and I did so by making a new batch of cream puffs – this time with Dorie’s standard pastry cream. Also pictured in a bowl behind them: a batch of Dorie’s cocoa meringue cookies.


As for this week’s recipe: it’s my next-to-last week with Tuesdays With Dorie, and I wish I had something better than the stupid standard ugly picture. It tasted good once I scraped off the small black areas on the edge. Here it is. Go home.


Tuesdays With Dorie Kablammo – Peppermint Cream Puff Ring?

From what I can tell, I only have two Dorie recipes left after this one. So of course, I needed one (hopefully) last disaster, of my own design.


This is my cream puff goop puff. A few things went wrong. For starters, my “ring” of pastry did not come out right. It did not puff – it was dense and eggy, and it tasted like french toast. The pictured puff is one of the four “extras” I made with the dough that was not necessary for the ring. They all rose just fine. Not sure what the big problem was.

The mint cream was was more of an ooze. This is my fault. Dorie called for the cream, which had been steeped in mint leaves, to chill for three hours prior to whipping. I thought one hour was enough, and clearly it did not whip at all. I wasn’t a huge fan of the natural mint flavor, although it probably would have been more refreshing had it been lighter. I didn’t even bother making the chocolate glaze.

It wasn’t a total wash, though – I now know how to make cream puff pastry dough and will probably make a handful of small puffs (with a simpler pastry cream) for a get-together on Friday. WE SHALL SEE

Tuesdays With Dorie RETRO – La Pallette’s Strawberry Tart and Redux of Simple Berry Tart

I made a couple of tarts for a picnic, and whoop-de-poop, one of them just so happened to be my next TWD recipe. The La Pallette’s Strawberry Tart is super simple – chopped strawberries on top of strawberry jam (the recipe calls for high quality, but the highest quality my grocery store carried was Welch’s) on top of a tart shell.


The simple berry tart was, this time, made according to recipe with blackberries and raspberries. Last time, over two years ago, it was all strawberries on miniature shells. Ch ch check it out.


Tuesdays With Dorie Dwindling – French Chocolate Brownies

These brownies are pretty good. I don’t mean to sound ho-hum, but really a brownie is a brownie. The density, size, and mix-ins can be different, but really you know what this tastes like.

There are four recipes left (maybe a few more, depending on whether there were recipes I missed in the two-fer weeks) in Baking: From My Home to Yours. Then I’m going to be choosing my own recipes weekly. How brave! How bold!
