Tuesdays With Dorie – Snickery Squares should be easy

These are Dorie’s Snickery Squares, which is about as close as Dorie can get to calling something “Snickers” and without infringing on a copyright. Shortbread base, dulce de leche and caramelized peanuts in the center, and dark chocolate on top.

I apologize for the picture – if I remember to take a picture of the actual cut, layered bar, I’ll edit this post later.

The recipe calls for store-bought dulce de leche, but alas! I am from Pennsylvania. I made my own dulce de leche. The first technique I tried was a microwave technique, but I ended up with a huge mess. The second, successful technique was a four-hour process, but it did the job. I had to poke holes in a can of sweetened condensed milk and then boil the thing, thereby condensing it further into what I can only assume is a valid representation of dulce de leche.

The rest is pretty straightforward. Shortbread on the bottom. Caramelizing some nuts. Glazing the thing in chocolate and letting it set to solid. The nicest thing is that I learned how to make delicious, delicious dulce de leche. The rest is just yumminess.

I had four personal days that I had to burn off at work this week – I am taking the opportunity to play Legend of Zelda: Skyward Sword, and it is very, very good.

Just a few months out from finishing this cookbook. Also, I’ll be changing soon to a standard WordPress blog to avoid further server expenses. I will likely retain, but there will likely be some cosmetic changes around here that I won’t be able to change as the site reverts to one of WordPress’ free templates.

In the meantime, here is my homemade dulce de leche, as well as my nuts.

Tuesdays With Dorie REWINDED – Pecan Sour Cream Biscuits

These were yummy biscuits with just a hint of added sweetness due to the brown sugar. Don’t let the looks fool you – these were fluffy and wonderful. Not as good as an old-fashioned buttermilk biscuit, but an excellent carby side.

Tuesdays With Dorie RESPECT – Almost Fudge Gateau

Gato is Spanish for “cat.” Gateau is probably French for “cat.” There is very little cat in this recipe, and in fact, very little meat at all.

It’s a good enough chocolate cake, and my office thought it was pretty good as well.

Sorry for being a day late on my Tuesday post. The recipe was made in a timely manner, but Tuesday was ST VALENTINE’S DAY. I hope everybody else’s day was as romantic as mine (PIZZA and VIDEO GAMES with my WIFE).

Tuesdays With Dorie REINVIGORATION – Brown Sugar Apple Cheesecake

This treat went over very well with the coworkers. “Best cake I’ve ever had” was bandied about by some (although the credit goes all to Dorie and none to ol’ Mike). SO HERE’S THE BAD NEWS – my phone needed to be wiped out, and I lost the only existing picture of this cake. Please believe me, it looked like a brownish cheesecake.

My wife wanted me to make some sugar cookies with fondant for a Get Well bouquet. This is the end result. The other end result is the slow, painful death of my hand mixer when I tried to make fondant. I figure I got my $20 out of that hand mixer, which I’ve used in almost every recipe for the past three years.

I also made Dorie’s tall and creamy cheesecake for Rachel’s mom’s birthday – again, no pictures. I’ve made it several times throughout this blog, though, so just pretend it looks like one of those.
