Tuesdays With Dorie – Creamy Dark Chocolate Sorbet

I had some fears when I put this in the freezer. It never quite came together in the ice cream maker, and I was afraid that I was going to come back to a brown ice cube in the morning. However, this scooped perfectly and the consistency was perfect.

There are certain ice cream-type treats that you can eat on their own, but this is not one of them. Way, way, way too chocolatey. Gonna have to eat it with something that will cut the sweetness, like a slice of white bread or a celery stalk.

Tuesdays With Dorie – Absolutely Not Chestnut Scones, You Guys

Dorie’s recipe calls for chestnut flour. Dorie even specifically indicates that this flour is only available in specialty stores. I’ve had enough trouble finding ingredients in my area to know that this super-secret special ingredient was not in my future. Still, I looked. I also looked for coconut flour and almond flour, at the suggestion of other TWD bakers.

Nothing.

Neither of my grocery stores even carries chestnuts, let alone chestnut flour.

I wouldn’t have been so bummed about this, except that without the chestnut flour, this recipe would be EXACTLY THE SAME AS LAST WEEK’S SCONES.

So, I improvised. These are my hazelnut scones. I switched to two full cups of all-purpose flour (replacing the 3/4C chestnut flour), and I replaced 1/8 Cup of the heavy cream with hazelnut-flavored coffee creamer. Absolutely not as good as some actual, honest to god ingredients, but it would have to do.

The scones themselves came out beautifully and tasted great. We dipped them in Nutella for the full-on Hazelnut Experience.

I do have to say that I’m just about sconed out here, you guys. Let’s make something full of sugar, please!

Tuesdays With Dorie – Cream Scones, Tractor Cakes, and Oatmeal Scones

I FORGOT THE CURRANTS! I had them sitting in a box, but once the dough was mixed together, all bets were off. Straight into the oven. Oh well. These turned out very nicely (in less than half of the recommended cooking time, and some of these were pret-ty dark). They tasted great. Airy and mildly sweet.

HALFTIME! Here is a cake I made for my wife’s boss’s birthday. He likes John Deere Tractors. These tractors mowed the words “happy” and “birthday” into this cake. I am quite proud of this cake, probably the prettiest thing I’ve made (or at least the closest to its original conception). The recipes are all basic Wilton recipes. Wilton’s yellow cake, Wilton’s chocolate buttercream, and Wilton’s buttercream. The cakes are layered, so this ended up quite tall.

I’m glad we had a moment to celebrate something that turned out nicely. Since we started with scones, let’s end it with scones: these are Dorie’s oatmeal scones. I made a mistake and pre-made the wrong scones for one of the TWD weeks and couldn’t correct it because I was on my honeymoon. Not sure what went wrong here: maybe too long of a cook time (I wasn’t watching as closely with these scones as I had with the cream scones). Either way, here they are. They tasted good, but they’re not winning second prize in any beauty contests.

Tuesdays With Dorie – Chocolate Chunk Muffins

It’s very hard to screw something up that is chocolate filled with chocolate. I could have burnt them or undercooked them (I didn’t), but in the end it doesn’t matter because it’s just like eating a big chocolate chocolate from the chocolate store.

That’s all I have – I’m down to the wire here, you guys – I’m about 60 seconds away from making this Wednesdays With Dorie.
